New Head Chef Paul Phelan comes to Montsalvat with an exciting approach to the traditional cuisine provencale that The Meeting Pool is noted for. "My passion has always been the great traditional food of Europe with its extraordinary range of flavours and techniques. We will be using fresh produce from Montsalvat's gardens as well as beautiful local yabbies, salmon and lamb."

"Founded in 1939, the romantic artist's retreat of Montsalvat is one of Australia's oldest creative colonies and its Gothic hall is a local landmark. Artists, sculptors and jewellers occupy the mud-brick cottages in the five hectares of gardens, an appealing oasis for wedding parties, musicians, photographers and casual visitors alike. One of the larger cottages has been transformed into The Meeting Pool restaurant, where chef Stephen Shing offers rustic French dishes, plucking herbs from the garden to adorn fresh trout or a duck-leg braise. Italian white anchovy on a crunchy house-made crouton primes the palate perfectly for a country-style terrine of duck, pork and pistachio. Garlic prawns come with lemon and parsley butter, while a tart - perhaps roasted pumpkin and ricotta, or asparagus and goat's cheese - features regularly. There may be sweet crumbed veal cutlets, but expect daily specials, too, perhaps a take on a bouillabaisse. The Meeting Pool is a welcome new addition to the Eltham dining scene under the steadying hand of its maitre d' and the guidance of restauranteir and Montsalvat resident Sigmund Jorgensen, co-founder of 80's three-hatter Clichy." 13/20
