Montsalvat, has appointed Steve Shing as the head chef of The Meeting Pool which has been transformed from a cafe to a provincial style restaurant, now open for dining from Thursday to Saturday nights.


Steve’s culinary style reflects the French techniques he mastered working with notable chef Michael Lambie at Taxi Dining Room and later in French fine dining and brasserie style at Upper House and Lower House. Steve also spent time at the award winning 5 star Royce Hotel.

 

Describing the new menu at The Meeting Pool, Steve says “the emphasis will be on offering a seasonal menu, with a focus on locally sourced produce which results in simple classic flavors of provincial cuisine”

 

To coincide with the appointment of Steve Shing, The Meeting Pool at Montsalvat will be officially re-launched, giving the region an elegant European dining option within Melbourne’s own vibrant arts community.

 

Dishes on the new menu will reflect the provincial theme such as

 

Fresh Rainbow Trout from the trout farm in Buxton are lightly pan fried and served with Salad Nicoise, made with beans tomatoes and kipfler potatoes and herbs picked from Montsalvats own garden.

 

Cruisses de carnard braise. Duck legs braised with Chambers tawny port, orange & thyme served with citrus and coriander salad.

As summer progresses we will be serving wonderful local berries which can be enjoyed with a glass of Yarra Burn sparkling cuvee.

 

Our wine list will reflect our commitment to support local boutique winemakers and therefore be updated on a regular basis.

 

Founded by Justus Jörgensen, Montsalvat is Australia’s oldest artists’ colony and is home to practicing artists. It remains to this day a working not-for-profit arts centre set in 12 acres of established gardens.

 

The historic buildings include charming mud brick cottages, the impressive Great Hall and now a key new attraction - The Meeting Pool restaurant, offering a wonderful European ambience within the restaurant and extending to the beautiful terrace. A changing exhibition of vibrant and exciting art works will be on display featuring the work of innovative artists
